I came across this chai-spiced apple cake as I was looking for a yummy fall treat. I wanted to use up some of the Costco sized container of apples we currently had on hand. When I saw this recipe, I was instantly attracted to how PRETTY it was. If it looks intimidating, don't let it intimidate you - it's gorgeous but easy to make.
I followed A Cozy Kitchen's recipe but made one change.
The recipe calls for buttermilk but I was wanting to use a dairy-free option. And also, I typically don't have buttermilk sitting around in the fridge. The dairy-free buttermilk recipe only requires 2 ingredients and I included how to do it below. For this recipe I used unsweetened vanilla cashew milk.
You can make as many adjustments as you'd like in order to fit your dietary wants/needs (ex: use gluten-free flour to make it GF). Oh, and I should note that for whatever reason, it took an extra 15-20 minutes for mine to cook completely (may have been from the dairy-free buttermilk..I'm not sure).
Something else you could do is CHEAT and make a box cake and still do the sliced apple topping on top and you'll be sure to impress your family and friends!
- Select your choice of dairy-free milk (coconut, almond, cashew, etc.) and pour 1 cup into a glass container
- Add 1 tbs. of vinegar or lemon juice (I used Bragg's Apple Cider Vinegar)
- Stir together
- Allow it to set for 10 minutes
It would be a lovely Thanksgiving dessert to add to the menu! And it will fill your kitchen with a delicious cinnamon spice scent! I definitely recommend serving it with vanilla ice cream!
