Winter Salad
 
Full of fruity flavor. The fruits of winter: apples, citrus and pomegranates! It came to me when we were thinking of what to bring as a side to my in-laws one year for Thanksgiving. I wanted to bring something fresh and green to add to the mix of the usual Thanksgiving/Christmas sides (which I LOVE). Well, everyone loved it and I thought it'd be a great one to share with all of you!
Ingredients
  • Spinach or spring mix
  • Clementine pieces
  • Chopped apple (I love honeycrisp or gala)
  • Pomegranate arils (I like to buy the Pom Poms Fresh Arils in a cup. Costco carries them in a 2-pack)
  • Craisins, dried cranberries
  • Cinnamon sugar pecans (or you can just use plain pecans/walnuts)
  • Feta Cheese
  • Citrus dressing: ΒΌ cup EVOO, 1 tbs. Dijon, 1 tbs. pure maple syrup, 1 tsp. apple cider vinegar, salt + pepper
Instructions
  1. Combine all ingredients together in a bowl.
  2. For dressing, I like to mix it all together in a mason jar so that I can store it with a lid or transport it easily if we need to. Also, it's to taste so add more of whatever you think it needs for your taste buds!
Notes
I didn't include any amount for the ingredients. It's one that I kind of eyeball and you can really use however much of each ingredient that you'd like!
