I got this recipe from the back of the Trader Joe's flaxseed meal bag but have made a few minor changes. It's a favorite around here and it's great for on-the-go energy and it also takes away any sweet cravings. Be careful, they're addicting!
No Bake Oatmeal Energy Bites

I got this recipe from the back of the Trader Joe's flaxseed meal bag but have made a few minor changes. It's a favorite around here and it's great for on-the-go energy and it also takes away any sweet cravings. Be careful, they're addicting!
Ingredients
- 1 cup rolled oats (we use the gluten free oats from TJ's)
- ½ cup flax seed meal (aka ground flax seeds - also from TJ's)
- ½ cup creamy almond butter (we love the Kirkland's brand from Costco)
- ⅓ cup honey
- 1 tsp. vanilla extract
- ½ cup mini chocolate chips (Enjoy Life brand are our favorite - they are gluten and dairy free along with many others if you look it up online)
Instructions
- Combine ingredients in a large bowl and mix well.
- Roll about 1 tablespoon of the dough between your hands to form a ball.
- Place on a small lined baking sheet/large plate/something that will fit into your freezer. Freeze them for an hour.
- Once they have hardened, I transfer them to a glass storage container and place them back into the freezer. Be careful before you take a bite, because they can be a little hard...give it a few minutes and they will soften. Or, you can just store them in your refrigerator if you prefer for them to be more soft.
